On-Site Cafeteria/Catering Services

We are a relatively small networking company.  We maintain an onsite cafeteria/catering program.  The program is a subsidized model where we provide space and equipment.  A monthly mgmt fee is paid based on a % of revenue generated from the operation.  I am curious as to what others in the area are doing (program/no program, comp model employed, trends, etc).  Would appreciate any feedback.  Thx
